Chipotle Turkey Chili

This is one of my all time favorite things to make. It's really healthy, filling and satisfying because it's loaded with beans, vegetables, ground turkey, spices and beer. Even if you hate beer you won't taste it and it adds a nice edge to the chili. You could use easily chicken, beef or vegetable broth if beer isn't your thing. Canned chipotles are actually better than the dried kind. The smokey chipotle flavor is key to this chili. If you can find smoked paprika it's awesome stuff!







Turkey:
1lb ground turkey
1 tbsp. chipotle adobo (from canned chipotles)
3 cloves of garlic (minced)
1 tsp. smoked paprika (or regular paprika)
1 tbsp. chili powder
big pinch kosher salt
a few grinds of black pepper
olive oil


Veggies:
2 onions (diced finely)
6 stalks of celery (diced)
6 carrots (peeled and diced)
1 tsp. kosher salt
a few grinds of black pepper
olive oil

Beans, Spices, Tomatoes & Beer:
3 12oz. bottles of beer (or broth)
1 small can black beans (drained)
1 small can white beans (drained)
1 small can tomatoes (preferably fire-roasted)
2 tsp. ground cumin
1/2 tsp. dried oregano



Add more olive oil and the vegetables. Let cook for about 10 minutes until they are slightly browned and the onions are translucent. Scoop out of the pot and set aside in a bowl. Mix turkey mixture and saute in olive oil in a large pot or dutch oven until cooked through.  Add beer. Let the beer reduce for a couple minutes then add the beans, tomatoes and spices. Finally, add the vegetables. Let it simmer for about 15 minutes.
