Roasted Tomato Basil Soup

This is Ina Garten's recipe, changed slightly to my liking. She adds crushed red pepper, extra garlic and a ridiculous amount of basil. Personally, I think all that takes away from the tomato taste. I do add heavy cream though, which she doesn't. Trust me...it needs it! Eat this with some cheese sandwiches (like swiss, yum!) grilled or ungrilled.



3 lbs. ripe roma tomatoes, cut in half lengthwise
olive oil
2 tsp. kosher salt
cracked black pepper
2 onions
4 garlic cloves
1 (28oz.) canned tomatoes, with their juice
fresh basil
1 tsp. fresh thyme
1/4 tsp. dried oregano
1 qt. chicken stock
1/4 cup heavy cream
