Perfect Pancakes




This is an altered version of a NY Times recipe. I add 1/2 less buttermilk than they do and I add vanilla extract.


Perfect Pancakes

2 cup all purpose flour

3 T sugar

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 1/4 tsp kosher salt

2 cups buttermilk (or 2 cup whole milk with 2 T white vinegar)

2 eggs

3 T unsalted butter, melted (don't microwave)

1/2 tsp vanilla extract

1/4 cup cornmeal (optional)

Mix dry ingredients then add wet ingredients and mix until combined. Don't over mix.
