Arroz Rojo (rice cooker method)

This is super easy and turns out perfect.


1 1/2 cups long grain rice

2 tablespoons (approx.) of grapeseed oil

1/3 cup (approx.) jarred salsa or 4 roma tomatoes chopped

2 cloves chopped garlic

1 3/4 cups chicken broth


Saute the rice in a pan with grapeseed oil over medium-high heat for a few minutes. Stir often until faintly browned.

Transfer the rice to a rice cooker and add tomatoes or salsa, garlic and chicken broth. Cook according to your rice cooker (I just use the white rice setting). Fluff when it's done.
