Flour tortillas

I got this recipe from Joshua Weissman. I use half the oil though, which I learned from ChatGPT.


300g or 2 cups of all purpose flour

1 tsp kosher salt (or 2 tsp diamond crystal kosher salt)

1/2 tsp baking powder

180mL hot water

2 tbsp oil

Knead about 2 minutes. Rest 10 minutes. Divide into 5 pieces. Rest another 10 minutes. Cook on medium low heat on each side. You have to roll them out one at a time and then cook. It won't work if you try to pre-roll them all first. The dough will be tough relaxed and will lose its shape.
