Flour tortillas

I got this recipe from Joshua Weissman. I use bread flour instead of all purpose.


300g or 2 cups of bread flour

1 tsp kosher salt (or 2 tsp diamond crystal kosher salt)

1/2 tsp baking powder

180mL hot water

1/4 cup oil

Knead about 2 minutes. Rest 30 minutes to 1 hour. Divide into 5 pieces. Cook on medium low heat on each side. You have to roll them out one at a time and then cook. It won't work if you try to pre-roll them all first. The dough will be tough relaxed and will lose its shape.
