Instant Pot Spanish Rice

 I got this from thetravelpalate.com. I double the amount of tomato sauce they use. There wasn't enough tomato flavor the way they had it. Make sure to really toast the rice well in the beginning.


2 tbsp vegetable oil

2 cups white long grain rice (rinsed)

1 clove garlic minced

1/2 onion diced

1 cup tomato sauce puree

1 tsp salt (equivalent to 2 tsp diamond kosher salt)

2 cups chicken broth


Cook rice on saute mode for about 10 minutes or until very white and some grain are slightly golden. Press cancel, add everything else and pressure cook on high for 3 minutes. Turn keep warm option off. Let naturally release for about 14 minutes. Fluff with a fork.
