Homemade White Bread

I got this from Josh Weissman. I changed a few things, like using half and half instead of milk, adding whole wheat flour, letting it proof overnight (the biggest improvement) and baking it with a dish of boiling water.


375g bread flour

65g whole wheat flour



200g lukewarm water

100g half and half

9 grams yeast

8g diamond kosher salt
21g granulated sugar
3 tablespoons melted unsalted butter


Mix all the non-flour ingredients. Add to the two flours. Mix. Let sit 30 mins. Knead. Put in fridge overnight. Let it come to room temp and rise a little. Place it in a pan. Let it double. Preheat oven at least 30 minutes and then add a tray of boiling water. Bake at 375F for 10 minutes, cover with foil and bake another 25 minutes.
