Flour Tortillas updated

300g ap flour

200g very hot water (160F or higher)

7.5g salt (about 2 tsp diamond kosher)

2 tbsp avocado oil

2 tbsp lard


  • Mix water + salt first
    Dissolve salt in the hot water before adding — more even seasoning.

  • Minimal knead
    1–2 minutes max. Over-kneading fights thinness.

  • Long rest
    15 minutes covered. Roll into balls and rest for 30 more minutes.

  • Roll thinner than feels reasonable
    Sonoran tortillas should look almost wrong before cooking.

  • Hot, dry pan
    Medium-high. 20–30 sec per side. No pressing.
