Raw tomatillo avocado salsa

 

  • 4–6 raw tomatillos (husked, rinsed)
  • 1–2 jalapeños (or 1 serrano for more heat)
  • 1 small clove garlic
  • ¼ cup cilantro
  • 1 ripe avocado
  • Juice of 1 lime
  • ½–¾ tsp salt
  • 2–4 tbsp neutral oil (vegetable or avocado oil)
  • Optional: a small piece of white onion (like 1–2 tbsp)

🔥 How to make it (this part is key)

1. Blend the base first

Add to blender:

  • tomatillos (raw)
  • jalapeño
  • garlic
  • cilantro
  • lime juice
  • salt

Blend until smooth.


2. Add avocado

  • Add the avocado
  • Blend again until creamy

3. Emulsify (this is the secret step)

  • Turn blender on low
  • Slowly drizzle in the oil

👉 This makes it:

  • smooth
  • creamy
  • “taqueria-style” instead of chunky

4. Adjust

  • Add a splash of water if too thick
  • Taste → adjust salt/lime
