Raw tomatillo avocado salsa
- 4–6 raw tomatillos (husked, rinsed)
- 1–2 jalapeños (or 1 serrano for more heat)
- 1 small clove garlic
- ¼ cup cilantro
- 1 ripe avocado
- Juice of 1 lime
- ½–¾ tsp salt
- 2–4 tbsp neutral oil (vegetable or avocado oil)
- Optional: a small piece of white onion (like 1–2 tbsp)
🔥 How to make it (this part is key)
1. Blend the base first
Add to blender:
- tomatillos (raw)
- jalapeño
- garlic
- cilantro
- lime juice
- salt
Blend until smooth.
2. Add avocado
- Add the avocado
- Blend again until creamy
3. Emulsify (this is the secret step)
- Turn blender on low
- Slowly drizzle in the oil
👉 This makes it:
- smooth
- creamy
- “taqueria-style” instead of chunky
4. Adjust
- Add a splash of water if too thick
- Taste → adjust salt/lime
