Cucumber Mojito

Sounds unusual but the addition of cucumber to a mojito makes this drink even more refreshing and delicious. Don't knock it until you try it. To make simple syrup, a 1:1 ratio of water and sugar, just heat 1 oz water and then mix in 2 tablespoons of white sugar.

1 1/2 oz good quality white rum (I use Mt. Gay)
1 lime, juiced
1 oz simple syrup
handful of spearmint leaves
3 ice cubes, crushed
4 oz club soda (preferably chilled)
5 cucumber slices

Put rum, lime juice, simple syrup and mint in a lowball glass. Muddle the mint with a muddler or a wooden spoon. Add ice, club soda and cucumbers. Garnish with a half-moon cucumber and sit back and relax.
