White Bean & Andouille Sausage Soup

White Beans:
1lb white beans (washed a few times)
filtered water
salt

Cajun Seasoning:
2 parts each: garlic powder and smoked paprika
1 part each: dried oregano, dried thyme, onion powder, cayenne pepper, black pepper, salt

White Bean Soup:
2 tsp cajun seasoning
cooked white beans (mostly drained)
1lb andouille sausage
1 qt. chicken broth
5 sticks celery
1 red bell pepper
1 onion
3 cloves garlic
3 green onions
3 bay leaves
vegetable oil

Soak the beans overnight in filtered water. Drain. Boil with enough water to cover it. Add salt at the end.

Sautee andouille sausage in oil. Remove. Sautee celery, bell pepper and onion. Then add garlic. Then add andouille, bay leaves, chicken broth and cooked beans. Add green onions at the end.
