Brined Turkey Breast

Brine:
2 cups water
2 tbsp. kosher salt
1 tbsp. sugar

Dissolve salt and sugar in water over heat. Let cool. Put turkey breast in a ziploc bag with brine and let sit for a few hours. Rinse 3 times.

Heat cast iron pan over high heat. Preheat oven to 400 F. Coat turkey liberally with Trader Joe's "21 Salute Seasoning" then sear skin side down for a few minutes. Put a little butter on non-skin side and flip. Put in oven until internal temp is a little under 165 F, which takes about 40 minutes.
