Winter Minestrone
This is based on Giada De Laurentiis' recipe and it's excellent. I changed a few things, like bacon instead of pancetta, zucchini instead of Swiss chard and no potato. The bacon really makes it.
2 tablespoons olive oil
1 onion, chopped
2 carrots, peeled, chopped
3 celery stalks, chopped
1/4 lb bacon (chopped)
3 garlic cloves, minced
4 fresh tomatoes
3 fresh rosemary sprigs
1 (15-ounce) tetra pak container cannellini beans (with liquid)
1 quart beef broth
1 ounce piece Parmesan cheese rind
2 zucchinis (cut in small cubes)
Salt and pepper
Saute bacon then remove from Dutch oven. Add olive oil, onion, carrot and celery. Saute. Add garlic then tomatoes, rosemary, beans. Then add broth and cheese rind. At the very end turn the heat off and add zucchini and reserved bacon.
