Brussels sprouts with bacon
The trick to brussels sprouts is cutting off all the stem at the bottom. That way they aren't bitter. I learned this on my own. The other tricks I've seen online like cutting an "x" at the bottom doesn't work. This is the way I like to cook; a few really good ingredients simply cooked in a cast iron pan.
1lb brussels sprouts (stem removed and cut in half)
1/3 high quality bacon (I like Whole Foods bacon)
sea salt
fresh cracked pepper
Heat a cast iron pan. Cut the bacon into small pieces and saute in the pan. Remove bacon after it's cooked but not crispy or overcooked. Add the brussels sprouts, season with salt and pepper, and cook until browned a bit. Add bacon at the end. Cook for about one extra minute and serve.
