Pepita Salsa Lentil Soup
I was inspired by this awesome pepita salsa from Trader Joe's and I came up with this recipe today. It's very healthy, you can make it vegan if you're one of those weirdos and it's inexpensive to make. Serve it with some pita chips.
3/4 cup red lentils (soaked in some purified water for about 30 minutes, then drained)
Mirapoix:
2 large carrots (diced)
6 celery stalks (diced)
1 onion (Andrew Diced Clay)
4 cloves garlic (minced)
1 Tbsp. ground cumin
1 jar Trader Joe's pepita salsa
1.5 quarts organic chicken broth (from Whole Foods)
kosher salt
fresh cracked black pepper
grapeseed oil
In a dutch oven, saute the mirapoix (season with salt and pepper) in some grapeseed oil until slightly browned.
Add the garlic and cumin. Saute 30 seconds then the salsa, lentils and broth.
Cooked slightly uncovered for about 25 minutes or until lentils are cooked enough. Season with more salt if necessary.
