Beef and Broccoli
I got this from the blog "Fox and Briar". It's outstanding and has the perfect amount of oyster sauce, which is really the key ingredient in beef and broccoli. I altered the recipe a little bit - I don't add baking soda or oyster sauce to the raw meat. I don't use beef broth. To me the ginger is optional. I also added sake because sake makes everything better.
Beef
1lb to 1.5lbs flank steak (sliced thinly across the grain)
1 tsbp cornstarch
kosher salt
black pepper
Broccoli
broccoli
sesame oil
red pepper flakes
Sauce
1/4 cup low sodium soy sauce
1 tbsp brown sugar
1 tbsp oyster sauce
6 cloves garlic minced
1 tbsp fresh ginger (optional)
1 tbsp sesame oil
1 tbsp good sake
2 tsp cornstarch
Garnish
1/2 cup scallions
Boil the broccoli for 3-4 minutes. You want it very al dente. Set aside.
Mix the ingredients for the sauce.
Lightly salt and pepper the steak. Add the cornstarch.
In a non-oiled, non-stick pan saute the steak in small batches to get a nice caramelization on it. Add all the beef back into the pan then add the sauce and let boil for a minute. Add the broccoli and mix. Turn off the heat and garnish with 1/2 cup scallions
