Easy Dill Pickles
I got this from smittenkitchen except that I add water to the brine. This is very simple to make, vastly better than store-bought and requires no cooking. They're outstanding on a turkey and pepper jack cheese sandwich.
about 8 kirby or persian pickles (sliced into coins)
1 tbsp. kosher salt
1/2 cup white vinegar
1/2 cup purified water
handful of chopped fresh dill
few cloves of smashed garlic
big pinch of red chili pepper
Put everything in a quart size mason jar and shake. Let sit in the fridge at least 30 minutes. Shake some more. Leave in the fridge overnight to get the full pickling effect.
