White Bean & Vegetable Soup (under $10 soup)

I was trying to come up with something cheap to make that was still good and healthy.


1lb dried white beans

olive oil

2 carrots

4 stalk of celery

1 onion

3 cloves garlic

1lb tomatoes

zucchini (optional)

parmesan rind (optional)


Soak the beans in warm water for about 1 hour. Drain, add fresh water until it's about an inch or more above the beans. Add a small glug of olive oil. Pressure cook on high for 30 minutes and then let sit for natural release. Season with salt.

Saute the carrots, celery and onion with olive oil in a stock pot until onions are translucent. Season with salt and pepper. Add garlic and tomatoes. Then add cooked white beans and the bean broth.

Add zucchini and parmesan after about 15 minutes. Simmer until done.
