Instant Pot Spanish Rice
I got this from thetravelpalate.com. I double the amount of tomato sauce they use. There wasn't enough tomato flavor the way they had it. Make sure to really toast the rice well in the beginning.
3 tbsp vegetable oil
2 cups white long grain rice (rinsed at least 3 times)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground cumin
1 cup tomato sauce puree
1 tsp salt (equivalent to 2 tsp diamond kosher salt)
2 cups chicken stock
Cook rice on saute mode for about 15 minutes until the grains are slightly golden. Press cancel, add tomato sauce and spices. Mix. Then add chicken stock and pressure cook on high for 4 minutes. Turn keep warm option off. Let naturally release for about 15 minutes. Fluff with a fork and let sit 5 minutes.
