White Bean and Kale Minestrone Soup
I got this from Giada Di Laurentiis. I changed a few things, but it's mostly the same. Don't use canned white beans. Just don't.
1 yellow onion (diced)
3 carrots (diced)
4 celery stalks (diced)
vegetable oil
2 cloves garlic (minced)
1 bunch kale
14 oz can crushed tomatoes
1 qt chicken stock/broth
1 1/2 cups dried white beans (cooked)
1 sprig rosemary
parmesan cheese
fresh cracked pepper
For the White Beans:
soak 1 1/2 cups dried white beans overnight
rinse
pressure cook in instant pot on high for 14 minutes, then natural release about 10 minutes
add some garlic powder, onion powder, few springs of fresh thyme, diamond kosher salt and fresh pepper
