Homemade Croissants
I got this recipe from the YouTube channel "Benny's Baked".
500g Flour
50g Sugar
10g Salt
250g Water
100g Softened unsalted butter ( At least 80% butterfat )
24g Fresh yeast (10-12g instant dry yeast)
250g Unsalted butter for lamination
Note if you use salted butter: Salt is sodium chloride, it's 40% sodium by weight. For example, if your butter has 90mg of sodium per tablespoon, it has 225mg of salt per tablespoon. Equivalent to 1.8 grams per stick. So, you would subtract 1.8 grams from the recipe.
